The whole cardboard template thing is a good idea, except - roll/cut uncooked dough to slightly bigger than the template, bake, then fine cut to exact shape as soon as it comes out of the oven and is still soft. It'll harden up after a few minutes.
I only used one template piece, I just flipped it over for two of the walls. Then you can be sure they're all exactly the same. The roof beams I cut with a ruler and a sharp knife.
