It could be:

to scare off other moles;
to show other farmers that they have done their bit in getting rid of the moles (and those other farmers should now do their bit); or
to freak people out.

Also there's the carrying on of a tradition without really knowing why, but it's "what we do and what we've always done".

Some families have weird their traditions such as getting up at 7am on Sundays, other families hang dead moles on their gates.

Not sure H&S; would approve.

Makes me think of the Italian Nazis that were strung up after the war. Nazi Moles... now that is a movie I would watch
