yeah i have to say I haven't mastered it's not so bad in small batches. But I was making flan for 150 people, and I think I took it off the heat too soon, it was browning and had become less bubbly. So I started pouring into the flan molds, it hardened almost immediately and seemed to trap a lot of air in itself. So it didn't have the nice brown, well 'caramel' color I was hoping for. When I've made it before, (in smaller batches) it is clear as glass, and a lovely amber color. In the end I suppose it's alright. After 45 minutes of cooking with the flan custard on topof it turns to a liquid anyways....
it tasted good, if that counts for anything.
