Cupcake time!

Been baking cupcakes today - 12 coconut & bounty ones and 12 vanilla
bean yoghurt & chocolate chip ones. :)

its a chocolate bar. Basically gooey shredded coconut covered in milk chocolate. My favourite! Its split in two tho, so its like 2 small bars in one wrapper.

Anyway, here's the recipe for coconut & bounty cupcakes / muffins:

for 12 muffins:

175 g(rams) soft butter
2 eggs
120 g sugar
100 mL coconut milk
100g shredded dried coconut flakes (like the stuff found in bounty, but dry. ;))
150 g flour
60 g corn or potato starch
1/2 of a small packet of baking powder (don't know if the packet sizes are standardized - EDIT: Apparently one of those packets contains 15 g!)
3 - 3.5 bounty bars, diced.

Mix butter, sugar, eggs. Add coconut milk and shredded coconut. Stir in flour, starch and baking powder. Mix in bounty bits. Bake in muffin tray for 20 minutes at 180-200C.

Yes, we get them here. It's just not so well branded that it's what instantly comes to mind. They're like mounds. Red package, and blue package? Yeah. Ok. with you now. :)
