I really only like biscuits when they are fresh, so I don't imagine they would ship well once they were done. It could probably be frozen raw, shipped and baked on the other end though.
This is a garlic cheese biscuit recipe that I am still messing with. It was better this time, but still not quite where I want it to be.

I am still not thrilled with how they are turning out, although I liked these better than the last batch. As soon as I develop a recipe I am happy with, I will post it. :)
