Jim's huge!

But he's a big softie and Linda knows how to keep him perfectly in check.

He listens carefully, does what he's told and is very gentle. A bit like me,
eh Anja?

I was out taking a series of pictures for my photo-course, they make a great
subject, got exactly what I needed.

(Easter) Sunday kitchen!


In Ethiopia long-simmered stews are known as "Wats", this is one with
chicken & eggs, a sort of "Mother & Child reunion".

It's a kind of chicken-in-tomato-sauce, but then different.

Vegetable oil

Onions, I had some shallots & a couple of red onions in store too.

A few cloves of garlic.

A "thumb" of root ginger.

175ml chicken stock.

250ml tomato sauce.

The seeds out of 5 Cardamom pods (bit of a fiddle getting them out).

1/2 tsp ground Turmeric

1/2 tsp ground Cinnamon

1/2 tsp ground Cloves

1/2 tsp grated Nutmeg

Enough chicken pieces for about 4 people.

4 hard-boiled eggs.

Chop the onions, garlic & ginger up fine.

Fry the onion gently for about 10 mins, until soft, then add the garlic &
ginger, fry for a couple of minutes longer. (the garlic will burn and go
black & bitter if you fry it too long)

Add the tomato sauce & the stock, bring to the boil.

Simmer down till it's reduced a little in volume.

Add the chicken lumps, that have been coated in the spices-mix.

Stick the lid on (this is a "Tagine" , keeps all the moisture and goodness
in the dish while on a low heat for ages) and keep in on the smallest
burner, on its lowest position for, well ages.

Alternatively bung it in the slo-cooker and forget about it for the rest of
the afternoon.

Towards the end bung in the hard boiled eggs (peeled, of course, silly) to
warm through, garnish with freshly chopped Coriander and serve with
Naan-bread or Pitas or some such.

This dish is "fragrant" rather than hot'n'spicey.

Hunting the "Ijsvogel"

So, it's Easter Sunday and Boet & I head off to where the Kingfishers reign, at "early o'clock".
Cammed-up with Boet's son, Mick's, leftover bedroom curtains.
Perched on the edge of a deep & stinking ditch/pond, opposite where them Kingfishers live, not far from slipping in the water, Nikons & all, rapidly getting a numb-bum.
Not a sausage.
We saw them zip past once or twice in a flash of electric-blue but they never stopped to sit and pose for us on that conveniently-placed branch sticking out over the water.
We know where to find them now at least, we'll be back!

Never bored

Waiting for the Stevedores & shunters to get their fingers out on Thursday
evening @ Hull.
When you've got a camera close to hand there's no excuse for getting bored.
Playing with the light levels, slow shutter speeds, tracking, zooming.
There's that many buttons, switches & menu options, once I've worked out
what one set of functions do I've forgotten what half the others are for!

Dunsfold Dakota

(one of) the airfields that Top Gear use to race around on. The one with the all-white 747 parked up on, that they like to drag around with tractors and 4x4's,
you're not supposed to take pictures inside the airfield but I snuck one out the window.
